Ingredients
For the Crust:
- 1 1/2 cups almond flour
- 1/4 cup coconut flour
- 2 tbsp granulated Swerve (natural sweetener)
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 7 tbsp melted butter
For the Filling:
- 4 packs (8 oz each) cream cheese, softened
- 1/2 cup brown sugar Swerve*
- 1 cup pumpkin puree
- 3 large eggs
- 1 tsp pure vanilla extract
- 1 tsp cinnamon
- 1/2 tsp ground ginger
- 1/4 tsp salt
Preparation Steps
- Preheat the oven to 350°F (176°C).
- Mix almond flour, coconut flour, Swerve, cinnamon, and salt in a bowl.
- Add melted butter and blend well. Press mixture into an 8″ pan, forming an even crust with slightly raised sides.
- Bake for 10–15 minutes until golden. Reduce oven temperature to 325°F (162°C).
- In another bowl, beat cream cheese until smooth. Add pumpkin puree and mix until creamy.
- Beat in eggs one by one, then add vanilla, cinnamon, ginger, and salt.
- Pour filling over crust and smooth top. Wrap pan with foil and place it in a roasting dish filled halfway with boiling water.
- Bake for 1 hour, or until the center slightly jiggles. Turn off oven and let it cool with door open for 1 hour.
- Refrigerate for at least 5 hours or overnight before serving.
