Keto Pumpkin Pie Cheesecake

Ingredients

For the Crust:

  • 1 1/2 cups almond flour
  • 1/4 cup coconut flour
  • 2 tbsp granulated Swerve (natural sweetener)
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 7 tbsp melted butter

For the Filling:

  • 4 packs (8 oz each) cream cheese, softened
  • 1/2 cup brown sugar Swerve*
  • 1 cup pumpkin puree
  • 3 large eggs
  • 1 tsp pure vanilla extract
  • 1 tsp cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp salt

Preparation Steps

  1. Preheat the oven to 350°F (176°C).
  2. Mix almond flour, coconut flour, Swerve, cinnamon, and salt in a bowl.
  3. Add melted butter and blend well. Press mixture into an 8″ pan, forming an even crust with slightly raised sides.
  4. Bake for 10–15 minutes until golden. Reduce oven temperature to 325°F (162°C).
  5. In another bowl, beat cream cheese until smooth. Add pumpkin puree and mix until creamy.
  6. Beat in eggs one by one, then add vanilla, cinnamon, ginger, and salt.
  7. Pour filling over crust and smooth top. Wrap pan with foil and place it in a roasting dish filled halfway with boiling water.
  8. Bake for 1 hour, or until the center slightly jiggles. Turn off oven and let it cool with door open for 1 hour.
  9. Refrigerate for at least 5 hours or overnight before serving.
